AGEING The harvest takes place at the end of October. It undergoes prefermentative maceration for 2-3 days at 12ºC. Vinification occurs at a controlled temperature of 25ºC in stainless steel tanks with native yeasts. Daily pump-overs are performed to increase color extraction. Aging for 12 months in Bordeaux barrels of American and French oak. Resting for 12 months in the bottle. Unfiltered wine.
FOOD PAIRING Pairs well with all types of meats, cured meats, tapas, and fatty fish.
